Brown Sugar and Herb Brine

Ingredients
  

  • 1 Gallon Water
  • 1 Cup Kosher Salt
  • 1/2 Cup Brown Sugar
  • 2 Tbsp Pickling Spice
  • 1 Each Yellow Onion Sliced
  • 1/2 Cup Fresh Garlic Lightly Smashed
  • 1/2 oz Fresh Thyme
  • 1/2 oz Fresh Rosemary
  • 4-6 each Fresh Bay Leaf Depending on size

Equipment

  • 6 Quart Heavy Bottom Pot
  • 1 Whisk
  • 1 Chef Knife
  • 1 Cutting Board
  • 1 2 Gallon Cambro (Or something comparable to holding about 2 gallons)

Method
 

  1. Add everything to a 6qt pot and bring up to a simmer, remove from heat and let cool to room temperature. Place in refrigerator and chill completely overnight.
  2. After at least 12 hours, you can strain the brine and it’s ready for use!
