Brown Sugar and Herb Brine

Equipment

  • 6 Quart Heavy Bottom Pot
  • 1 Whisk
  • 1 Chef Knife
  • 1 Cutting Board
  • 1 2 Gallon Cambro (Or something comparable to holding about 2 gallons)

Ingredients
  

  • 1 Gallon Water
  • 1 Cup Kosher Salt
  • 1/2 Cup Brown Sugar
  • 2 Tbsp Pickling Spice
  • 1 Each Yellow Onion Sliced
  • 1/2 Cup Fresh Garlic Lightly Smashed
  • 1/2 oz Fresh Thyme
  • 1/2 oz Fresh Rosemary
  • 4-6 each Fresh Bay Leaf Depending on size

Instructions
 

  • Add everything to a 6qt pot and bring up to a simmer, remove from heat and let cool to room temperature. Place in refrigerator and chill completely overnight.
  • After at least 12 hours, you can strain the brine and it’s ready for use!
